is there a way to have a game were you have to defeat all the enermies andget all the tecnoligies without the game ending because it ends to fast

If you play with an advantage like 40 % you can do this or there are other ways. I am sure some of our more experience Civ Rev Players can help you out on this.

it is a good goal to aspire to. it is achievable, just keep working on it. once you start taking loads of enemy cities develop them quickly and max out your science and gold. kidnap some scientists if you can to rush the future technologies.

Currently, there is no way to keep playing once you've hit one of the victories. So if you do any of:
Capturing all enemy capitals.
Landing a space ship on Alpha Centauri.
Building the United Nations.
Building the World Bank.then that's it, game over.
What you can do is to get as close as possible to these, without actually doing any of them. So instead of doing the above things, you could:
Capture all enemy cities except for a single capital. Place armies of defensive units around that one city, so that it's effectively useless.
Build a space ship, but don't send it.
Get your 20 cultural points (wonders/great people/flipped cities) but don't build the UN.
Get up to 20,000 gold but don't build the World Bank.I can usually get to this point by the mid-2000s on Emperor difficulty, and I'm not a fantastic player by any means. With a bit of practice you should be able to get to this point on almost every game you play (at least against the AI).

Do scenarios with specific win conditions (e.g. can only win by Economic) allow you to eliminate all other civs and continue playng? Because I was playing one scenario (can't remember which, might have been Enlightenment) and I defeated all of the other civs and went on to win a Cultural victory.

I keep getting a message that the game will end in 5 turns. I have only won 2 of 8 games by actually completing one of the senerios. I do not like the game being forced to end. Is this something one can turn off?

You can't turn it off, the game only lasts 193 turns.
Best advice is to try an easier difficulty or keep working on your game until you have developed a strategy that lets you win earlier. It's definitely doable!

I did exactly what nzgeek suggested a few days ago, before having read this. I wanted to have a tech win. I was playing Cleopatra. I could have had a domination win in the early 1900's. I had taken all over all other civs except the Greeks (I was playing the AI) who only had the capital Athens. I kept a peace treaty with them as I took out the other civs. Then I put tank units around them on land and 2 battleships off their coast line. Not long after they declared war on me. It was pretty funny watching their archer and pikemen units go up against my tanks. I laughed every time Alexander came up telling me he was going to take out my puny armies. This was on the DS, I bet when I try this on my PS3 in will look even better. It was annoying having my military advisor come up and remind me I only had to take one more capital for a win. Then the same happened when I had 20 cultural items and then again when I was approaching 20,000 gold, the other advisors reminding me I was close to a win. Finally I built the space ship, launched and arrived at Alpha Centauri in 2034. I ended the game with just over 18,000 gold, 20 cultural items and 3/4 enemy capitals. It was insane how much gold I was making each turn and how fast my cities were producing. I had cities with every building possible and could build a Great Wonder in under 10-15 turns.
I've only played a few times on my PS3 and not to a win, but the graphics are so much cooler on the PS3. On the DS all artifacts are the same a grey, kind of step pyramid like icon.
I'm totally addicted to this game on either platform. I started with the DS, but when I saw the graphics in the strategy guide I had to have the PS3 version. But it is nice to be able to play anywhere on the DS.
